Kale Pesto Flatbread

I made kale chips last week and had a bunch of kale to use up so ended up making this Kale walnut pesto from Healthy Food For Living.  It actually came out delicious, but I couldn't figure out how I wanted to use it!  After much deliberation (and a trip to TJ's ;)) I decided to put it on a flatbread.  I spread the pesto over the flatbread, topped with some mozzarella and sliced plum tomatoes and baked at 350 for 8-10 minutes, broiling for the last 2 minutes to brown the cheese.  Delish!

This weekend Sean and I are going out to a fancy dinner for our 10 year anniversary.  Dating anniversary that is, but still.  Holy crap, right?  We have been together for an entire decade.  I think that's preeeeeetty awesome. :D

Banana PB Chocolate Chip Muffins

I was wanting to bake something tonight but used up the rest of our eggs for breakfast yesterday.  (and was too lazy to go out for more)  After perusing a bunch of recipes for egg-less muffins and egg "replacers," I decided to just come up with something on my own.  For my first try, I'd say this is a huge hit!  I'm pretty impressed with myself.



Banana PB Chocolate Chip Muffins
makes 10 muffins
Ingredients
1/4 cup butter, melted
1/4 cup peanut butter
2 ripe bananas, mashed
1/2 tsp vanilla
1/3 cup sugar
1/2 cup oat flour (old fashioned oats ground in a food processor)
1/2 cup white whole wheat flour
1/4 heaping tsp baking soda
1/4 heaping tsp baking powder
dash of salt
1/2 cup chocolate chips
splash of milk

Preheat oven to 350.  Melt butter and mix in peanut butter and mashed banana with hand mixer.  Add vanilla and sugar and mix some more until incorporated.  Mix dry ingredients in a separate bowl, then add to the PB banana mixture.  Add a splash of milk (about 1 tbsp) until the batter is smooth.  Mix in chocolate chips.  Fill lined cupcake tins 3/4 of the way with batter.  Put in oven, drop temp to 325 and bake for about 24 minutes, or until toothpick comes out clean.



These were delicious and Sean said the best I've made yet :)  I can't complain!

Running

So I got back to running yesterday after about a week off.  I'm using the couch to 5k program and am currently on the 7th week-- run for 25 minutes.  I've been struggling with the last 3-5 minutes--hips starting to hurt, feet and calves cramping up-- but yesterday I was able to push through and even ramp up my pace for the last half mile! It's pretty crazy when you get excited about running ;) lol  I ran for 2.2 miles during that time, just one more to go until I can officially run a 5k!

We've signed up for a mud run in July, so I've got plenty of time to get to 3.1 miles, but lately I've been considering the Tough Mudder.  But it's ten miles plus a TON of brutal obstacles.  The good thing is that it's not timed, but I would expect to at least run for the majority of it.  Maybe Sean would be interested after he finishes his half marathon.  I'm not sure if I have the endurance for it, but it might be fun to try...

Intense.


Tonight for dinner we are going to Home Grown, an awesome organic bar/cafe that we found down here in Delaware.  Seriously, it's amazing.  All local food sources, great atmosphere, amazing food, and hoegaarden on tap.  Oh, and we have a Groupon. :D

First Post - Introduction

Hello!

The name's Rachel.  I welcome you to join me on my path to healthy living.  I love being in the kitchen and will post my new recipes and mishaps along the way.  No processed garbage here!  That being said, I can't promise there won't be some desserts here and there ;)  Baking is my downfall!

I have just started P90X2 and am supplementing that with training to run a 5k.  I can run 2+ miles comfortably now :)  The goal is to get to 3.1, then work in some sprints in order to improve my speed.  I can't wait for it to get warmer so I can run outside.  This cold weather is bullshit.  Christmas is over, now it's time for summer - right?

A little about my life, I have an amazing husband, and we have goldendoodle named Yankee.  Pretty sure he's the cutest dog ever.
 Yankee.

My recipes are always in an organized disarray, so the posts will keep them all in one place, and I'll post some workouts and progress as well.

Now I just have to get used to this camera...
